It was a big success for the catering equipment company. They invited some chefs who operate worldwide and who are in charge of introducing MKN catering equipment all around the world. Phoeniks was absolutely very pleased to be able to show European innovative catering equipment Melbourne to professionals of the hospitality and catering industries located around Melbourne.

Cook & chill forum: innovative cooking technique and catering equipment

The show took place in Brunswick (very close to Melbourne) in the showroom of Advantage commercial kitchens. There were about 70 professionals of the catering and hospitality sectors attending the cook & chill forum. At the end of the forum they admitted to be quite seduced and impressed as well by the catering equipment that PHOENIKS brought in the showroom of Advantage commercial kitchens near Melbourne. Indeed, there were multiple innovative pieces of European catering equipment: combi oven, vegetable cutting machine, and the new “Flexichef” designed by MKN. This piece of state-of the-art catering equipment will be distributed in Australia from 2013. To say a few words about the Flexichef, this is extraordinary catering equipment that can cook much faster than any other type of catering equipment. It deals with a completely automated multifunctional catering equipment (it is also equipped with an automatic cleaning system) that can cook up to 4 meals at a time with various temperatures. Excellent demonstrations of catering equipment

Chefs sent by the prestigious catering equipment builder MKN did a great demonstration of the Flexichef and introduced the cook & chill technique: this is a cooking method used in many European catering industries. Combined to reliable catering equipment such as combi ovens, it enables to save time, energy, food. Actually, many European catering industries use such a technique to get higher levels of food safety. It is being spread more and more in Australian commercial kitchens and other catering sites but this is still not a general cooking technique used in the whole country of Australia. Things to improve for next catering equipment shows

If Jacques MORIN – owner of the catering equipment supplier PHOENIKS – had to tell a little drawback about the cook & chill forum, he would say that he would have liked to introduce the ventilated ceiling of HIdria Gif – one of the major partners of the company. Indeed, as chefs cooked a lot, there was also much smoke in Advantage commercial kitchens. Thus it would have been interesting to see how such a piece of catering equipment (ventilated ceiling) is able to absorb the smoke in commercial kitchens and let a safe, clean environment.
Anyway, PHOENIKS was proud to show exclusive catering equipment Melbourne. The catering equipment supplier will try to organize other forums or small trade shows similar to this forum that was a really pleasant event.
