The wine making philosophy behind Carmel Ridge wines is to craft fruit forward, easy drinking, value for money Israeli wines for drinking young. The wines all come from the southern Mount Carmel region, close to Carmel’s Zichron Ya’acov Cellars overlooking the Mediterranean Sea between Tel Aviv and Haifa. After careful harvesting and fermentation in sophisticated modern stainless steel equipment, the wine is kept for a few months prior to bottling. No oak is used. Suitable for vegetarians and vegans and its a kosher wine to boot ! Something different for those who only like to buy chardonnay.
The Carmel Appellation range is at a much higher level than the ridge and contains some of the best Israeli wine.

Carmel Winery was established in 1882 by Baron Edmond de Rothschild of Château Lafite fame, and is one of the oldest companies in Israel. Sourcing grapes from over 300 vineyards throughout the country, many in cool climate high altitude sites such as the Upper Galilee and Judean Hills, Carmel has become a byword for quality and consistency. From the highly acclaimed Carmel Limited Edition, the company’s flagship wine, and the stylish Single Vineyard series of wines, to the Carmel Ridge range, the company’s team of internationally trained winemakers has amply demonstrated Israel’s tremendous potential as a quality wine producer. All wines produced by Carmel are both Kosher and Vegan.

Carmel Appellation Old Vine Carignan 2006

Cellar Notes: A red wine made mainly from ‘old vine’ Carignan vineyards in Zichron Ya’acov, which are nearly 35 years old, and a little Petite Verdot.. Aged for 12 months in French oak barrels.

Appearance: Deep purple hues

Aromas: Red fruit and coffee

Palate: Complex blend of cherries, raspberries, freshly ground coffee and Mediterranean spices, with soft tannins and a long finish.

Serving Notes: Has the warm spiciness to partner a wide range of Mediterranean dishes, lamb on a skewer, fried potatoes and beetroot salad.
