On January 1, 2011, a new law went into place in Illinois and twenty five other states that mercury or anything containing mercury cannot be shipping into those states. That includes the specialty thermometers and thermostats for commercial pizza ovens. There are multitudes of restaurant pizza ovens that use such systems to regulate the temperature.
With the new law, restaurant operators with ovens needing repair are having trouble getting the original equipment manufacturers (an OEM) such as Blodgett, Montague, Imperial, Vulcan Hart, Garland, Southbend, and Bakers Pride to make prompt repairs. The thermometer and thermostat parts are listed as no longer available; referred to in the appliance repair industry as NLA.
Commercial restaurant appliance equipment is just one area that James Dolbeare is an expert technician in. He spoke to an industry convention in New York City on May 1, 2011 about a legal solution he has found to repair these pizza ovens, to circumvent the costly retro fit of almost $2000 (or more), and complete the repair for less than $800.
